Seaspaghetti / Himalthalia Elongata

Himalthalia Elongata or Sea Spaghetti is harvested in Spring to Autumn. It is found on the lower shore in the Atlantic and likes a semi exposed area .It is known for its mermaid type tresses that grow from its base .

It has a lovely mild flavour so it’s very versatile in cooking. When cooked it turns a lovely bright green and looks even more delicious. You can replace regular spaghetti with it for a lower GI option, and is also tasty in a tomato sauce. Add to salads or pickle it when its young….it is also great in stews or meaty dishes.
